Tasting Note
Fresh, mineral-driven Chardonnay: pear, green apple and white-peach with citrus zest, saline/flinty notes and a subtle minty/herbal lift. Fine acidity, waxy texture and light oak spice lead to a taut, persistent finish.

Western: oysters, grilled lobster, roast chicken with herbs, creamy pasta, Comté or Brie. Asian: sashimi, miso-glazed cod, tempura prawns, steamed crab with ginger, light Thai coconut fish curry.
Production Method
Hand-harvested fruit; whole-bunch pressing, fermented in 350L French oak barrels (≈25% new), full malolactic fermentation and aged on fine lees with bâtonnage for ~11 months.
