Tasting Note

Dense blackberry, plum and violet aromas with cracked pepper, olive, smoked meat and graphite; ripe, structured tannins and saline minerality, long savory finish.


Food Pairing

Western: roast lamb, braised beef, venison, aged cheeses (Comté, Manchego). Asian: Korean BBQ, char siu / Cantonese roast pork, Sichuan-style beef, teriyaki duck.


Production Method

Mostly whole-bunch fermentations, ~3-week maceration; aged ~20–22 months in oak (c.15–20% new); bottled unfined and unfiltered.
