Tasting Note
Concentrated, very stony and mineral with toasted oak, ripe pear, hazelnut and buttered citrus; silky mid-palate, generous weight and a long, saline, persistent finish.

Western: roast chicken, lobster with beurre blanc, creamy pasta, roasted root vegetables, aged Comté. Asian: miso-glazed black cod, sushi (fatty tuna), steamed sea bass with ginger-soy, tempura prawns.
Production Method
Hand-harvested Chardonnay; gentle pressing, barrel fermentation in French oak with malolactic fermentation and extended élevage (notable new oak influence), low-yield viticulture and careful cellar élevage.
