Tasting Note
Pale gold with intense lemon, lime, crushed oyster-shell and flint. Silky entry expanding to a dense, mineral mid-palate of stone fruit, almond skin and saline citrus; long, chalky, citrus-pith finish with integrated oak.
Food Pairing
Western: roast chicken, lobster with beurre blanc, creamy mushroom risotto, seared scallops. Asian: miso-glazed black cod, sashimi/sushi (fatty tuna), light tempura, soy-citrus (yuzu) dressed seafood.
Production Method
Hand-harvested Chardonnay, gentle whole-cluster pressing, fermentation and ageing in French oak (high new-oak percentage), lees ageing and minimal intervention; domaine practices sustainable (lutte raisonnée) viticulture.
