Tasting Note
Lemon oil, green apple and white flowers over crushed chalk and hazelnut; intensely mineral and saline with searing acidity, satiny mid-palate and a very long, sappy, stony finish.

Food Pairing
Western: butter-poached lobster, roasted chicken, porcini risotto, aged Comté or Gruyère. Asian: miso-glazed black cod, tempura prawns, sushi (fatty tuna), Cantonese steamed fish with ginger and scallions.

Production Method
Hand-harvested fruit; gentle pneumatic pressing; native-yeast fermentation and élevage in French oak barrels (moderate proportion new); minimal intervention, limited bâtonnage; ~16–18 months ageing.
