Tasting Note
Medium–full, satiny Chardonnay: pear, green apple, white flowers, toasted hazelnut and brioche with flinty minerality, bright citrus peel and saline finish. Racy acids and a chalky, persistent finish.
Food Pairing
Western: roast chicken, butter-poached lobster, mushroom risotto, creamy pasta, soft-ripened cheese. Asian: miso-glazed cod, seared scallops with soy-citrus, sushi (fatty tuna), tempura, Cantonese steamed fish.
Production Method
Hand-harvested fruit; gentle pressing, barrel fermentation in French oak (limited new oak ~20–25%), malolactic allowed, élevage ~15–22 months, bottled unfiltered.
