Tasting Note

Concentrated black and blue fruits, violets and blood-plum with clove, dark chocolate and subtle garrigue. Ultra-fine silky tannins, bright driving acidity and savory cumin/tapenade notes; very long, precise finish.


Food Pairing

Grilled ribeye, roast lamb, braised short ribs, mushroom risotto; Peking duck, Korean BBQ short ribs, char siu, spicy Sichuan beef; aged hard cheeses and charcuterie.


Production Method

Hand-harvested fruit, cold-soak and small open-top fermenters with gentle pump-overs and some whole-berry fermentation; malolactic conversion; matured 18 months in 75% new French oak hogsheads and puncheons; bottled under Stelvin.
