Tasting Note

Dense blackberry, black cherry and plum with violets, cracked pepper, smoked meats, licorice and dark chocolate. Full-bodied with firm, chalky tannins, bright spine of acidity and a long spicy, mineral finish.


Food Pairing

Grilled ribeye, roast lamb, braised beef short ribs, aged hard cheeses; Asian: Korean BBQ (galbi), char siu, Szechuan beef, Thai massaman curry, beef rendang.


Production Method

Traditional destemmed fermentation; matured ~18–20 months in French oak barrels (recent vintages in 100% French oak); bottled unfiltered and unfined.
