Tasting Note

Dense black-cherry and blackberry fruit with blueberry, violets, espresso, licorice and savory garrigue. Mocha/oak spice and aniseed underpin a firm, velvety-tannin structure and very long finish.


Food Pairing

Western: grilled ribeye, roast lamb, venison, aged cheddar. Asian: Korean BBQ (galbi), char siu pork, Sichuan pepper beef, hoisin-roast duck, rich Malaysian rendang.


Production Method

Hand-harvested Shiraz fermented in open-top fermenters; matured ~16 months in French (70%) and American (30%) hogsheads, majority new oak; bottled under Stelvin or cork depending on release.
