Tasting Note
Austere, finely delineated Meursault: saline, marine minerality with frangipane, grilled walnut, orange zest, nectarine and ripe orchard fruits; taut, precise and quite full-bodied with a lemongrass-tinged finish.
Food Pairing
Western: roasted lobster, seared scallops, roast chicken with mushroom cream sauce, soft-ripened cheeses (Brie/Comté), foie gras. Asian: miso-glazed black cod, tempura prawns, sushi (fatty tuna), Chinese steamed sole with ginger and scallion.
Production Method
Hand-harvested Chardonnay; ambient-yeast fermentation, partial élevage in oak barrels (small percentage new), minimal lees stirring, barrel aging ~12 months then additional élevage in tank.
