Tasting Note

Dense, full-bodied Barossa Shiraz — black/blue fruits (blackberry, plum), pepper and tobacco, charred oak and savory, with silky yet powerful texture and a long, savory finish.


Food Pairing

Western: fillet steak with mushroom sauce, roast lamb, braised beef short ribs, barbecued ribs. Asian: Korean BBQ (bulgogi), char siu, Sichuan pepper beef, miso-glazed aubergine.


Production Method

Hand-harvested (9 Mar), destemmed, 7-day skin ferment with twice-daily remontage; pressed, settled and aged 18 months in 50% new French oak; bottled March 2023.
