Tasting Note

High-toned pear, white cherry, chamomile, sea‑breeze and chalk; stone-fruit and lime zest with saline minerality. Liqueur-like richness balanced by vivid acidity and a very long, complex, saline finish.

Oysters, ceviche, grilled prawns, roast pork or pork belly, roast chicken, fresh goat cheeses; sushi, sashimi, tempura, spicy Thai or Sichuan dishes, Vietnamese seafood, dim sum.


Production Method

Hand-harvested fruit; native-yeast fermentation in stainless steel with minimal intervention and sulphur; bottled as a Kabinett retaining supportive residual sugar.
