Tasting Note
Pale-gold Champagne with aromas of cocoa, orange marmalade and biscuits. Palate shows buttery madeleine and pastry, candied and bitter orange, bright citrus and lively minerality, finishing long, fresh and elegant.
Food Pairing
Western: oysters, lobster with lemon-cream, sea bass in beurre blanc, truffle omelette, citrus desserts (tarte Tatin). Asian: sushi/sashimi, tempura, dim sum, Chinese/Thai dishes with ginger and citrus, mild Indian hors d'oeuvres.
Production Method
Traditional méthode champenoise; vintage wine aged in house cellars for decades then re-corked and disgorged as a ‘Collection’ release after extended bottle ageing.
