Tasting Note

Ripe black cherry, cassis and raspberry with cocoa, tobacco, graphite and violet hints; silky, velvety texture, polished tannins and a fresh, persistent finish.


Food Pairing

Roast lamb, braised beef short ribs, duck confit, mushroom risotto, aged hard cheeses; Asian: Peking duck, char siu, Korean BBQ, braised short ribs, shiitake pork stir-fry.


Production Method

Temperature-controlled fermentation in vats/cement with gentle extraction; malolactic in barrel/vat; aged ~14–16 months in French oak (mostly once-used), then blended from estate lots.
