Tasting Note
Dark plum, black cherry, cassis with cocoa, tobacco and loam; firm chalky tannins, vivid acidity and a long, mineral-driven finish. (Classic Pomerol balance of plush fruit and structure).
Food Pairing
Western: roast lamb, beef short ribs, mushroom risotto, duck confit. Asian: Peking duck, Korean BBQ (bulgogi) or galbi, soy-braised short ribs, shiitake and black bean stir-fries.
Production Method
Hand-harvested; vinified in temperature-controlled vats and aged in significant new French oak (2011 reported in 100% new oak) for c.12–18 months. Yield ~32 hl/ha.
