Tasting Note
Concentrated black-plum and blackberry fruit with violet perfume, dark chocolate, spice and cedar. Plush, silky texture with ripe, integrated tannins and a long, savory finish.

Food Pairing
Roast lamb, beef short ribs, duck confit, mushroom risotto; Asian: Peking duck, char siu, Korean BBQ (galbi), braised soy-braised beef or rich braised lamb dishes.

Production Method
Hand-harvested; plot-by-plot fermentation (cement vats), élevage ~18 months in French oak (majority new barrels/70% new reported). Traditional Bordeaux vinification, careful selection for grand vin.
