Tasting Note

Black cherry, cassis and plum with leather, cocoa and toasted spice; silky, layered mid-palate, fine minerality and a long, savory finish.


Food Pairing

Western: roast lamb, braised beef, duck confit, mushroom risotto, aged hard cheeses. Asian: Peking duck, char siu, soy-braised beef, Korean galbi (grilled short ribs), mushroom hot pot.


Production Method

Hand-harvested; fermented in wooden vats (~27 days) with pneumatic pigeage; aged 18 months in 100% new oak; no fining or filtration; château-bottled (June 2003).
