Tasting Note
Deep garnet; aromas of blackcurrant, cassis, violet, graphite and cedar. Palate shows concentrated black fruit, crushed-stone minerality, refined grainy tannins, tobacco and cedar; precise, elegant and very long on the finish.
Food Pairing
Western: dry-aged ribeye, beef Wellington, roast rack of lamb, truffled risotto, aged hard cheeses (Comté, Parmesan). Asian: Peking duck, Cantonese roast goose, Korean BBQ (galbi), soy-braised short ribs, shiitake and truffle umami dishes.
Production Method
Traditional Bordeaux vinification: destemmed grapes, controlled-temperature fermentation with extended maceration; selected lots aged c.18 months in French oak barrels with careful vat management.
