Tasting Note
Elegant, mineral-driven Cabernet with blackcurrant, wild blackberry, graphite, tobacco and floral lift; fine-grained ripe tannins, bright acidity and a very long, perfumed finish.

Food Pairing
Western: roast leg of lamb, ribeye, beef Wellington, mushroom risotto. Asian: Peking duck, Korean barbecue (galbi), Sichuan beef, Cantonese roasted meats.

Production Method
Hand-harvested, destemmed; fermentation in temperature-controlled vats with gentle extraction; aged ~18–20 months in new French oak with some press-wine inclusion
