Tasting Note
Refined, mineral-driven Cabernet: blackcurrant, black cherry, cedar, pencil-lead and floral lift. Silky, finely textured tannins with concentrated dark fruit and an impressively long, saline finish.
Food Pairing
Western: ribeye or roast lamb with jus, steak frites, aged hard cheeses. Asian: Peking duck, Cantonese char siu, Korean grilled beef (bulgogi/galbi), mildly spiced Malaysian beef rendang.
Production Method
Hand-harvested, destemmed fermentation in temperature-controlled vats; matured 18–20 months in French oak (high proportion new barrels); clarified and bottled after ageing.
Vineyard Info
