Tasting Note

Developed tertiary profile: dried plum, leather, tobacco, cedar and sous‑bois with lingering black cherry and spice. Medium-plus body, softened tannins and earthy, mushroomy finish; balanced maturity and a slightly rustic edge.


Food Pairing

Western: roast lamb, entrecôte, mushroom risotto, aged Comté or cheddar. Asian: Peking duck, char siu, beef bulgogi or Korean BBQ, soy‑braised short ribs, mushroom stir‑fry.


Production Method

Traditional Bordeaux red vinification—temperature‑controlled fermentation, extended maceration and aging in French oak barrels (12–18 months); estate bottled.
