Tasting Note

Black‑currant and tar with cedar, tobacco, wet earth and brambly red fruit. Firm, structured tannins, medium‑to‑full body, mineral backbone and a long, slightly rustic finish; develops underbrush, leather and tertiary spice with age.


Food Pairing

Western: roast ribeye, lamb shoulder, venison, aged cheddar. Asian: Peking duck, char siu, black pepper beef, Korean BBQ (galbi), hearty Chinese braised beef.


Production Method

Traditional Bordeaux vinification: fermented in temperature‑controlled vats, extended maceration, then matured ~18–20 months in French oak barrels (significant proportion new oak).
