Tasting Note

Deep cassis, black cherry, graphite, cedar, tobacco and truffle notes. Rich, concentrated palate with polished dark fruit, mineral backbone and long, savory finish; tertiary leather and earthy nuances develop with age.

Western: roasted lamb, ribeye, beef bourguignon, aged Comté or Gouda. Asian: Peking duck, Korean BBQ short ribs, beef rendang, miso-braised beef, rich mushroom hotpot.


Production Method

Hand-harvested, destemmed, fermented in stainless-steel vats by parcel; matured in French oak barrels (approx. 16–20 months; est. ~70% new) with careful blending for the grand vin.
