Tasting Note
Deep black-fruit core of cassis and blackberry with graphite, cigar box, violet and truffle notes. Monumental, dense and full-bodied with grainy, ripe tannins, bright acidity and an epic, mineral, lingering finish.

Western: roast lamb, ribeye or côte de boeuf, beef Wellington, venison, aged hard cheeses. Asian: Peking duck, char siu, Korean BBQ short ribs, soy-braised beef, mushroom hotpot (umami-rich dishes).
Production Method
Hand-harvested; temperature-controlled fermentation with extended maceration and malolactic in tank; élevage ~18–22 months in mostly new French oak barriques.
