Tasting Note

Perfumed black cherry, cassis and violet with tobacco, cedar and graphite. Medium–full bodied, mineral-driven, firm polished tannins, fresh acidity and a long, savory finish—elegant yet structured, suitable for cellaring or near-term drinking.

Food Pairing

Western: roast lamb, braised short ribs, venison, aged hard cheeses (Comté, Gruyère). Asian: Peking duck, char siu, Korean BBQ short ribs, beef rendang, rich Sichuan braised beef.

Production Method

Hand-harvested, very low yields and berry selection. Cold maceration, controlled fermentation in wooden vats, malolactic in French oak, aged 14–18 months in French oak (up to ~80% new).

Vineyard Info

Established by Jonathan Maltus (acquired 1996). Tiny 3–3.5 ha site adjacent to Château Angélus, produced at Château Teyssier; famed for high Cabernet Franc plantings and very limited production (~1,000 cases).
