Tasting Note
Perfumed Pomerol — red and black plums, wild cherry, violets, truffle and cocoa with subtle tobacco. Silky, creamy texture, fine-grained tannins and a long, floral, gently toasted finish.

Roast lamb, braised short ribs, mushroom risotto, duck confit; Asian pairings: Peking duck, char siu, Korean BBQ, braised beef short ribs, mushroom-based Chinese dishes.
Production Method
Hand-harvested Merlot; fermented in small vats with gentle extraction; matured in French oak barrels (partial new oak) for c.16–18 months; bottled in very small quantities.
