Tasting Note
Opulent, silky Merlot: baked black and red cherries, mulberry, plum, truffle, licorice, cocoa and warm spice. Plush texture with vibrant fruit and mineral sparks, very long, polished finish.
Food Pairing
Western: roast ribeye, confit duck, lamb rack, mushroom risotto, aged cheeses. Asian: Peking duck, char siu, Korean BBQ short ribs, braised beef with soy, shiitake mushroom hot pot.
Production Method
Hand-harvested; destemmed; fermented in stainless steel; low yields (~34 hl/ha); aged c.14–18 months in new French oak barrels; small-batch single-vineyard production.
