Tasting Note

Opulent black cherry and plum with violet, licorice and cocoa. Silky, velvety texture, rounded powdery tannins, bright acidity and a long, perfumed finish.

Western: roast beef, lamb, duck confit, mushroom risotto, aged cheddar and Comté. Asian: Peking duck, char siu (Cantonese BBQ pork), Korean galbi (beef short ribs), miso‑glazed aubergine.

Production Method

Hand‑harvested, small‑parcel fermentations in micro‑cuves; malolactic completed; aged 15–18 months in roughly 65–70% new French oak; minimal racking, typically bottled without filtration.
