Tasting Note

Concentrated blackcurrant, blackberry and plum with graphite, cigar-box and cedar notes. Medium-full, firm velvety tannins, fresh acidity and a long, mineral-driven finish.


Food Pairing

Western: roast lamb, beef tenderloin, aged hard cheeses; Asian: Peking duck, Korean galbi (beef short ribs), char siu or miso-glazed beef.


Production Method

Hand-harvested; destemmed, cold-sorted, 7–10 day alcoholic fermentation, ~3 week maceration; aged 16–18 months in French oak (≈60% new).
