Tasting Note
Dense black‑currant and black cherry core with cedar, tobacco, vanilla and toasty oak; medium‑to‑full body, fine yet firm tannins, mineral finish and balanced acidity. Drinkable now with continued development.
Food Pairing
Western: roast beef, rack of lamb, beef short ribs, aged Gouda, mushroom risotto. Asian: Peking duck, char siu (barbecue pork), Korean bulgogi or galbi, soy‑braised short ribs, miso‑glazed lamb.
Production Method
Hand‑harvested, fermented in a mix of wood, cement and stainless vats, pressed to barrique and aged 12–18 months with ~50–100% new oak for the grand vin.
