Tasting Note
Perfumed rose-petal and red/black cherry aromas; silky, mouth-filling palate with concentrated red fruit, fine-grained tannins, saline minerality and bright acidity. Long, elegant, persistent finish.

Food Pairing
Western: roast duck, beef bourguignon, lamb, mushroom risotto. Asian: Peking duck, miso-glazed fish (black cod), soy-braised short ribs, umami mushroom stir-fries.

Production Method
Hand-harvested Pinot Noir, partial whole-cluster fermentation in open-top vats, aged ~15–18 months in French oak (some new), minimal intervention and careful élevage.
