Tasting Note
Ripe mulberry, dark cherry and plum with pressed violets, menthol and subtle licorice; blood-orange lift, saline minerality and fine chalky tannins, medium–full body and a structured, persistent finish.

Food Pairing
Western: roast duck, beef bourguignon, lamb, mushroom risotto, aged comté or Brie. Asian: Peking duck, char siu, Korean bulgogi, shiitake soy‑glazed dishes, Cantonese roasted meats.

Production Method
Hand-harvested Pinot Noir with partial whole‑cluster inclusion, gentle extraction and fermentation; aged in French oak (portion new) for ~12–18 months.
