Tasting Note
Dense black-cherry and plum with floral violet and spicy cocoa notes, pronounced mineral/clay richness, silky fine tannins, lively acidity and a long, scented finish.

Western: roast duck, lamb, mushroom risotto, beef bourguignon. Asian: Peking duck, char siu, miso-glazed fish, red-braised pork (hong shao rou).

Production Method
Hand-harvested, sorted, partial destemming, cool pre-fermentation maceration, native yeast fermentation and 10–18 months élevage in selected oak (350L and barriques); minimal intervention, no fining or filtration.
