Tasting Note
Bright citrus and stone fruit with jasmine, chamomile, tarragon, beeswax and flinty minerality. Tight, linear palate with saline tension, pithy phenolics and crackling acidity leading to a long, zesty finish.

Western: oysters, seared scallops, grilled shrimp, roast chicken with lemon‑herbs, creamy seafood pasta. Asian: sushi/sashimi, miso‑glazed black cod, Thai green curry (mild), Vietnamese spring rolls.
Production Method
B.A. Thieriot fruit is farmed organically/biodynamically (not certified). Hand‑harvested, whole‑cluster pressed, barrel‑fermented in French oak (native yeasts), partial malolactic, aged on the lees with minimal filtration and low SO2.
