Tasting Note
Pure red and black cherry fruit with forest-floor earth, forest pine, dried rose, licorice and cinnamon spice. Silky fine tannins, vibrant acidity and a long, layered finish.

Roasted duck, mushroom risotto, coq au vin, pork tenderloin; Asian: Peking duck, miso-glazed black cod, char siu pork, shiitake soba.
Production Method
Organically/biodynamically farmed estate fruit; indigenous-yeast fermentation with 25–40% whole clusters; matured ~15 months in French oak (≈20–25% new).

Littorai (Heidi & Ted Lemon, founded 1993). The Haven (planted 2001) is the original estate vineyard at ~1,200 ft, cool Sonoma Coast site farmed biodynamically (not certified).
