Tasting Note

Concentrated blackcurrant, blackberry, cedar, graphite and tobacco with iron/mineral notes; ripe, silky texture, fine-grained tannins and long, savory finish.

Western: grilled ribeye, roast lamb, beef stews (Bœuf Bourguignon), aged hard cheeses. Asian: Peking duck, char siu, Korean BBQ (bulgogi), beef rendang, Cantonese roasted meats.


Production Method

Hand-harvested; alcoholic fermentation in temperature-controlled vats, malolactic in tank; aged ~15–18 months in French oak (approx. 50–60% new).
