Tasting Note
Concentrated white Burgundy: lemon, pear and white peach with yellow flowers, wet stone and oyster-shell minerality; saline drive, subtle spice and a long, precise, chalky finish.
Food Pairing
Western: roast lobster, beurre blanc, grilled sea bass, chicken in cream sauce, mushroom risotto. Asian: miso-glazed black cod, sushi/sashimi (fatty fish), Cantonese steamed fish, mild Thai curries.
Production Method
Hand-harvested Chardonnay, gentle pneumatic pressing, fermentation/ageing in large oak foudres and 350L barrels (limited new oak) for ~12–18 months, then resting in tank before bottling.
Vineyard Info
Domaine Marc Colin, founded by Marc Colin c.1970; now run by Damien and Caroline Colin. Estate (~12–19 ha) focuses on Côte de Beaune whites from top sites, moving toward lower new-oak élevage and respectful viticulture.
