Tasting Note
Dense, concentrated blackcurrant and blackberry with violet and floral lift, cedar, tobacco, toasted oak and smoke. Extremely powerful, firm ripe tannins, very long mineral finish—aromatic and brooding, develops markedly with aeration.
Food Pairing
Roast lamb, beef tenderloin, venison, braised short ribs, aged hard cheeses; Asian: Peking duck, Cantonese roast pork (char siu), Korean BBQ (bulgogi), soy-braised beef, mushroom and soy-based braises.
Production Method
Traditional Bordeaux vinification: maceration and fermentation in controlled vats/wood, followed by 18–24 months aging in new oak barrels; fining with egg white.
