Tasting Note

Perfumed violets and cedar, blackcurrant and red cherry, tobacco and warm spice; concentrated yet silky with ultra-fine ripe tannins, bright acidity and a very long, mineral-tinged finish.


Food Pairing

Western: roast lamb, beef Wellington, duck confit, aged hard cheeses, mushroom risotto. Asian: Peking duck, char siu (Cantonese roast pork), soy-braised beef short ribs, Korean BBQ (bulgogi), umami mushroom hot pot.


Production Method

Hand-harvested with strict parcel selection, traditional fermentation and parcel vinification; matured roughly 18 months in French oak barrels (portion new).
