Tasting Note
Deep ruby evolving to garnet; aromas of black cherry, blackberry jam, leather, tobacco, espresso and warm spice. Full-bodied, firm ripe tannins, bright acidity and a long savory finish with tertiary notes of humus and cedar.

Western: roasted lamb, grilled steak, wild boar, mushroom risotto, aged Pecorino and other mature cheeses. Asian: Korean BBQ (galbi), Sichuan-style beef, Cantonese char siu/roast pork, Japanese yakiniku or yakiniku-style grilled meats.
Production Method
Hand-harvested Montepulciano; fermentation in stainless steel with extended maceration; aged ~36 months in French oak barriques (high toast/new oak in some years) followed by prolonged bottle aging.
