Tasting Note
Silky, concentrated red and black cherry, raspberry and wild strawberry with violet florals, forest floor, spice and graphite. Vibrant acidity, fine-grained tannins and a long mineral, spice-tinged finish.
Food Pairing
Western: roast duck with cherry sauce, beef bourguignon, mushroom risotto, aged Comté or Gruyère. Asian: miso-glazed salmon, seared wagyu or ribeye, soy-sesame marinated pork, shiitake hot pot or sukiyaki.
