Tasting Note
Ripe dark cherry and cassis with cocoa, exotic spice, nutmeg and a mineral, iron-tinged core. Velvety, concentrated and balanced with fine-grained tannins and a very long, resonant finish.
Food Pairing
Roast lamb, beef bourguignon, duck breast, mushroom risotto; Asian: Peking duck, miso-glazed black cod, soy-braised pork, shiitake and bok choy stir-fry.
Production Method
Hand-harvested Pinot Noir; mostly de-stemmed, fermented in vats and aged 12–18 months in French oak (c.60–80% new) before bottling.
