Tasting Note
Bright cherry, raspberry and black‑berry fruit with violet florals, light spice, smoky forest‑floor notes; silky, caressing palate, fine tannins, fresh acidity and a savory, slightly tannic finish. Approachable young with medium‑long aging potential.

Food Pairing
Western: roast lamb, duck à l'orange, beef tenderloin, mushroom risotto, aged soft cheeses. Asian: Peking duck, char siu, miso‑glazed salmon, mushroom and soy stir‑fry, wagyu yakitori.

Production Method
Hand‑harvested Pinot Noir; native‑yeast fermentations with cold maceration, gentle extraction; ~16 months in ~50% new French oak; often bottled unfiltered.
