Production Method

Hand‑harvested, fully destemmed fruit; cold pre‑fermentation maceration, temperature‑controlled stainless‑tank fermentation (c.18–20 days) and c.14 months élevage in French oak (≈50% new).

Domaine Michel Noëllat is a family estate (19th‑century origins) farming ~27 ha across the Côte de Nuits; Les Noirots is a 2.84 ha premier‑cru parcel (east exposure, limestone soils).
