Tasting Note
Concentrated dark cherry and plum, earth and leather notes, crushed stone minerality, spice and subtle vanilla oak; noble, firm tannins, fine acidity and a long, saline finish.

Food Pairing
Western: roast beef, venison, duck breast, ribeye, wild mushroom risotto. Asian: Peking duck, char siu, Korean BBQ (bulgogi), miso-glazed aubergine or braised short ribs.

Production Method
Hand-harvested; full destemming; cold pre-fermentation 3–5 days; fermentation in thermo-regulated stainless steel (≈18–20 days); aged ~14–18 months in French oak (c.50% new).
