Tasting Note
Polished dark cherry and black-plum fruit with floral Vosne perfume, cassis, spice, subtle oak/espresso and earth. Medium-plus body, powdery, fine-grained tannins, lively acidity and a long, black-pepper-tinged finish.

Western: roast duck, confit, lamb, mushroom risotto, beef short ribs, aged cheeses. Asian: Peking/hoisin duck, char siu, miso-glazed aubergine, Sichuan pepper beef, Korean BBQ short ribs (galbi).

Hand-harvested, 100% destemmed; cold pre-fermentation maceration; native-yeast fermentation (≈18–20 days) in stainless tanks; matured 14–16 months in French oak (c.40–50% new depending on cuvée).
