Tasting Note

Concentrated black fruits (blackberry, plum) with cigar box, black truffle, cedar and smoked coffee. Full-bodied, lush mid-palate, powerful ripe tannins, bright acidity and an extremely long, mineral finish.


Food Pairing

Western: roast lamb, beef tenderloin, venison, mushroom risotto; Asian: Peking duck, char siu, beef bulgogi/Korean BBQ, miso-glazed aubergine.


Production Method

Hand-harvested, destemmed, fermented in temperature-controlled vats; matured ~18-20 months in French oak (≈80% new); blended before bottling (bottled June 2008).
