Tasting Note
Semillon-dominant, intensely mineral nose with beeswax, white peach and citrus; opulent, textured palate shows fig, lanolin and toasted oak, balanced by fresh acidity and a long saline finish.
Food Pairing
Western: scallops, lobster, grilled sea bass, roast chicken with cream sauce, foie gras. Asian: sushi/sashimi, tempura, Cantonese steamed fish, Chinese dim sum, Thai seafood curries.
Production Method
Fermented and aged in French oak barrels (54% new) with lees contact; matured in barrel ~10 months and bottled June 29, 2010.
