Tasting Note

Fresh citrus and lemongrass with honeysuckle, green apple and grapefruit; mouth-coating, mineral drive and rich, creamy texture with a long, bright, saline finish.

Western: lobster with beurre blanc, grilled scallops, roast chicken in cream sauce, goat cheese; Asian: sashimi/sushi, tempura prawns, miso-glazed black cod, mild Thai seafood curry, dim sum.


Production Method

Hand-harvested, direct pressing; fermented and aged in French oak barrels (portion new oak), malolactic sometimes in barrel; 12–14 months élevage sur lies.
