Tasting Note
Concentrated Sémillon-driven white: lemon tart, lime blossom, green mango and jasmine with cedar and sea-spray minerality. Medium–full bodied, tight, bright acidity and a long, chalky finish.
Food Pairing
Western: roast chicken, buttered lobster, seared scallops, creamy seafood risotto, foie gras. Asian: miso‑glazed black cod, steamed fish with ginger & scallion, tempura, Cantonese roasted duck.
Production Method
Hand-harvested (22–31 Aug 2017), early-morning picking; fermented and aged in French oak (33% new), bottled 22 May 2018. Blend of Sémillon and Sauvignon Blanc.
